From a hospital bed
to a kitchen revolution.

In 2021, Amelia Thomas was told by her doctor to cut red meat from her diet entirely. She was 34, active, and a lifelong lover of Kerala cuisine. The diagnosis was manageable — but the solution felt impossible. Every plant-based alternative she tried tasted like cardboard. None of it felt like home.

So instead of settling, she experimented. For over a year, she worked with local soybean farmers and a nutritionist to develop a tofu that actually absorbed Kerala spices the way meat does. As a result, Amel was born — not in a boardroom, but in a Thrissur kitchen, late on a Tuesday night.
